Here at Speak E-Z's we specialize in authentic southern cooking. The Chef, Dennis Rayborn, is sharing his family recipes by bringing Soul food to Bellingham. All of our ingredients are selected for the best and freshest flavor. All of our menu items are prepared in house from scratch to keep the authentic southern flavors alive.
The meats and poultry are smoked with Hickory wood for hours over low heat which ensures superior tenderness and a unique flavor. After 3 hours of smoking, the pork ribs are smothered with our house BBQ sauce and put back into the smoker for another 3 hours until they are just right. Our Spare ribs can be easily pulled from the bones, so tasty, they are finger licking good. The beef brisket is smoked for 7 hours before it is pulled out of the smoker. It is then trimmed of all its fat and the tender juicy brisket gets infused with our house BBQ sauce slice by slice. It's so tender, it falls apart. The pork is smoked for 9 hours, then cooled just enough to be hand pulled. All that remains is lean, succulent, white pork meat. We then add our house BBQ sauce and it's ready to be devoured. Chickens are halved and smoked for 3 hours. The low heat and smoke keeps the chicken meat tender and moist. After smoking, the chicken is finished on the grill with our house BBQ sauce.
